"Copal is everything to us. It represents our culture, our family, our roots, the flavors of Mexico's rich indigenous and colonial histories." 

Copal is the name of a tree found in Oaxaca, Mexico, and it also represents a tree resin that is burnt for ceremonial purposes (similar to incense) by the Mexicanos from the old cultures and the new. Copal also symbolizes the art of the indigenous peoples that use the wood to create objects, animals, people; art of nearly every form imaginable!

Overall, good. Fajitas were hot and mildly flavored. Everything was fresh from the rice and beans to the salsa. Would love to enjoy happy hour out on the patio when the weather gets warmer.
